The air fryer has established itself in a few years in kitchens that never owned a fryer. The name keeps a misunderstanding alive: the appliance does not fry, it cooks with hot air driven at high speed. Grasping that one point is enough to know what to expect from it, how to size it and why some dishes succeed remarkably well in it while others have no business being there.
What it really is: a small, very fast convection oven
An air fryer is a closed chamber in which an element heats the air and a fan drives it at high speed around the food. Cooking is therefore forced convection, exactly the principle of a fan oven, but in a very small volume.
That small volume makes all the difference. The air reaches the set temperature in two to three minutes, against ten to fifteen for a conventional oven, and it circulates so fast that it dries the surface of the food efficiently. It is that drying, combined with browning reactions, that produces the crispness people are after.
There is no immersion, so no bath of oil, but a tablespoon of oil is still worth using: it conducts heat to the surface of the food and clearly improves both colour and flavour. With no fat at all the result is drier and duller.
One consequence matters for safety and for cleaning: there is no frying smoke, no lingering smell in the home, and no used oil to filter or dispose of.

The stated capacity is not the usable capacity
Specifications quote a chamber volume in litres. That figure describes the total space, not the quantity of food you can actually cook, because hot-air cooking requires air to circulate around every piece.
In practice, a chamber filled beyond halfway no longer cooks by convection but by contact and steam: the food comes out cooked but soft and pale. That is by far the leading cause of disappointment, ahead of any fault in the appliance.
As a guide, a 4 to 5 litre chamber suits one or two people, and 6 to 8 litres a family of three or four. Beyond that, the footprint on the worktop becomes significant, and it needs checking before buying: these appliances are tall and they need clearance at the back to exhaust their air.
The shape of the basket matters as much as the volume. A wide shallow basket exposes more surface to the hot air than a narrow deep one of the same capacity, and it lets you lay food out in a single layer, which is the right way to use it.

Single basket or dual zone
Dual-zone models have two independent baskets, each with its own element and fan. They allow two preparations to cook at different temperatures and for different times, and above all to be synchronised so that they finish together.
That answers the appliance main weakness, its limited capacity. A complete meal, protein on one side and vegetables on the other, becomes possible in a single run.
The price is a larger footprint and a capacity per basket lower than that of one large chamber. For a big quantity of a single food, a good-sized single chamber remains more practical.
Some models offer a single chamber divided by a removable partition. It is an honest compromise, but the two zones then share the same temperature and the same airflow: you can separate the food, not the cooking regimes.
Power, temperature range and useful functions
Power generally sits between 1,400 and 2,500 watts. It determines how fast the appliance heats and how well it holds the set temperature when cold food is added, which counts more on large chambers.
The useful temperature range runs from around 40 to 80 °C for dehydrating or proving dough, up to 200 to 240 °C for crisping and grilling. A wide range opens the appliance to uses well beyond the humble potato.
The genuinely useful functions can be counted on one hand: a high-temperature grill setting to finish a gratin, a low-temperature dehydrating setting, a shake reminder partway through, and an explicit preheat. Long lists of preset programmes mainly provide reassurance at the start.
Look finally at ergonomics, which weigh heavily in use: a basket that comes out one-handed, a good non-stick coating, dishwasher-safe parts and a legible display are worth more than a connected feature.

What it does well, what it fails at
It excels at everything that benefits from a dry, browned surface: potato wedges, root vegetables, chicken wings and drumsticks, dry coatings, frozen products designed for the oven, and reheating leftovers that a microwave would turn soft.
It is also very good with small quantities, where firing up a sixty-litre oven for two portions makes no sense at all.
It fails, however, on liquid batters, which run through the basket, on very wet preparations, which steam instead of browning, and on classic egg-and-breadcrumb coatings, which lift off in the airflow unless bound with oil.
It does not replace an oven for large joints, family dishes, sizeable gratins or baking. It complements an oven rather than replacing it.
One simple rule sums up its use: a single layer of food, a thin coating of oil, and a turn partway through. Those three habits correct the vast majority of poor results.

Consumption, cleaning and safety
On small quantities an air fryer uses appreciably less than a conventional oven: it heats a volume ten times smaller and its preheat is measured in minutes. The advantage disappears as soon as several batches are needed to feed a whole table, where the oven regains the upper hand.
Cleaning determines how long the coating lasts. Let it cool, then wash the basket and rack in hot soapy water with a non-abrasive sponge. Grease spattered on the roof of the chamber, around the element, must be removed regularly: it smokes and taints later cooking.
Use neither metal scourers nor pointed utensils inside the chamber. Once the coating is broken it flakes and the appliance becomes unusable. Check whether the basket is dishwasher-safe, which is not always the case.
On safety, the appliance must stand on a stable heat-resistant surface, away from walls and wall cabinets, never under a shelf. The air exhausted at the back is very hot. Do not run it inside a cupboard or under a closed hood, and never cover the ventilation openings.

Do I really need to add oil?
Not necessarily, but a tablespoon changes the result. Oil conducts heat to the surface of the food, promotes browning and holds spices and coatings in place. Without it the cooking is still fine but the surface is drier and paler. This remains a very long way from the quantities used in deep frying.
Can it cook homemade chips?
Yes, provided the potatoes are prepared properly: evenly cut batons, rinsed in cold water to remove surface starch, dried carefully, then a spoonful of oil. Cook in a single layer and shake the basket twice. The result is good, different from deep frying, with a softer centre than a crisp one.
Does an air fryer replace an oven?
For two to four portions, very often yes, and more quickly and frugally. For a family dish, a large joint, a sizeable gratin or baking, no: the volume and even heating of an oven remain irreplaceable. The two appliances complement each other rather than compete.
Can baking paper go in the chamber?
Only weighed down by food, and never during preheating. A loose sheet is drawn into the fan and against the element, which presents a real risk. Prefer the perforated sheets sold for the purpose, cut to basket size, which let air pass through the base.
Why does my food come out soft?
In almost every case the basket is overloaded. Hot-air cooking requires air to circulate around each piece; stacked up, food steams in its own moisture. Cook in a single layer, even if that means two batches, and turn the food partway through. Insufficient drying before cooking produces the same effect.
How do I get rid of a lingering smell in the appliance?
It almost always comes from baked-on grease on the roof of the chamber, around the element, an area people forget to clean. With the appliance cold and unplugged, remove those deposits with a soft soapy sponge. A short empty run with a small dish of lemon water in the basket then helps neutralise what remains.
