A bean-to-cup espresso machine grinds the beans immediately before extraction, which is the only way to keep the volatile aromas that pre-ground coffee has already lost. Every machine in this category does that; what separates them is the grinder, the milk system, water management and ease of upkeep. Here is how to read those four points, and a few figures not to over-interpret.
Beans, capsules or a separate grinder
Ground coffee oxidises quickly. Once the bean is ground, the surface exposed to air increases enormously and the aromas degrade within tens of minutes. That is the whole argument for a bean-to-cup machine: it grinds on demand, cup after cup.
Against capsules, the difference rests on three points. Cost per cup is markedly lower with beans bought by the bag. Waste is reduced to grounds, which can be composted, instead of one wrapper per coffee. And the choice of coffee becomes unlimited, with no dependence on a proprietary catalogue.
Against a separate grinder paired with a portafilter machine, an automatic favours simplicity: it doses, tamps, extracts and ejects the puck with no intervention. A portafilter offers more control and a higher ceiling in quality, but it demands real practice and time for every cup.
The choice therefore comes down to a trade-off. Several coffees a day with no wish to fiddle: the automatic bean-to-cup. A taste for the craft and fine control: a portafilter with a dedicated grinder.

The grinder: steel or ceramic, and the grind setting
Hardened steel burrs grind quickly, are forgiving and cut the bean cleanly. They run slightly warmer and do wear, but their working life comfortably covers domestic use.
Ceramic burrs run cooler, stay quieter and wear very slowly. In exchange they cope badly with foreign objects: a small stone left in a batch of beans can chip them.
What matters more than the material is the number of grind settings and how easy they are to reach. Grind fineness is the first lever for correcting a coffee: too fine and the water passes slowly and the cup turns bitter; too coarse and it runs through too fast, leaving a thin, sour coffee.
One important point of use: on most machines the grind must be adjusted while the grinder is running, otherwise the mechanism can be damaged. The manual says so, and that instruction should be followed to the letter.
Avoid very oily or flavoured beans, which clog the grinder and the chute. Coffee roasted recently and kept in an airtight container away from light gives a far better result than any setting on the machine.

Pressure, a figure that is consistently misread
Specifications happily quote 15 or 19 bars. That is the maximum pressure the pump can produce, not the pressure actually applied to the coffee.
Espresso extraction happens at around 9 bars, the reference figure in the coffee world. Machines fitted with a 15 or 19 bar pump regulate that pressure downstream: the advertised number is a component specification, not a promise of quality.
A 19 bar machine therefore does not extract better than a 15 bar one. Comparing two appliances on that number is like comparing two cars on the top speed printed on the dial.
The parameters that genuinely matter lie elsewhere: the stability of the extraction temperature, the dose of ground coffee per cup, the grind fineness and the volume of water. A machine that lets you set strength, length and temperature for each drink, then memorise those settings, is worth far more than an extra bar.
Milk: steam wand, automatic system or carafe
The classic steam wand takes practice, but it gives the best control: it is what produces a fine, glossy microfoam suited to a cappuccino or a latte. It must be rinsed after every use, or milk dries inside it.
An automatic system drawing milk through a tube from a container makes a milk drink at a single press. The result is consistent, the foam a little coarser, and an automatic rinse at the end of the cycle simplifies upkeep.
A built-in milk carafe, removable and often storable in the fridge, is the most comfortable solution for daily family use. It does take up space and its ducts need cleaning regularly.
Whatever the system, one rule holds for all: the milk must start cold, and whole milk foams more easily thanks to its fat and protein content. Plant drinks work too, provided you choose those marked barista, formulated to hold foam.

Water, hardness and descaling
An espresso machine is above all an appliance that heats water. It is therefore the water that decides its working life, well before how heavily it is used.
In hard water, limescale builds up on the element and in the pipework. Flow drops, temperature drifts, and a breakdown eventually follows. Setting the water hardness in the machine settings, from day one, is not a formality: it is that setting which governs how often descaling is demanded. Your water supplier can give the local hardness, and most machines come with a test strip.
A built-in water filter, where the machine accepts one, reduces hardness and spaces out descaling. It must be replaced at the stated intervals, otherwise it becomes useless.
Never skip a descaling cycle the appliance asks for, and use the product specified by the manufacturer. White vinegar, often recommended, attacks certain seals and plastic parts. A descale postponed by several months usually ends in a repair.
Filtered or lightly mineralised water is a good alternative. Avoid demineralised water, whose conductivity machines read poorly and which gives a flat cup.

Daily upkeep, noise and footprint
Two architectures exist. A removable brewing unit lifts out, rinses under clear water and goes back in seconds: it is the easiest to maintain and the most reassuring over time. A fixed unit means relying on automatic cleaning cycles and degreasing tablets, with no access at all if it becomes heavily fouled.
Daily routine amounts to very little: empty the grounds container and the drip tray, rinse the milk circuit after every milk drink, wipe the wand. A machine neglected on this point soon gives a rancid taste, and it is almost always the milk that is responsible, not the coffee.
Grinder noise is brief but real, a matter of seconds per cup. Ceramic burrs and well-insulated housings make a noticeable difference in an open-plan kitchen or early in the morning.
Finally, check the footprint, and not only on the worktop: these machines need clearance above to fill the bean hopper, and access at the back or side for the water tank. A machine you have to move at every refill eventually wears out your patience.
One last adjustment not to overlook: the height of the coffee spout, which should match the cups you actually use. A spout set too high above a low cup lets the coffee cool and breaks the crema as it falls.
